Lovely Warm Soup!

Its that time of year again when the weather is closing in and we prefer to be wrapped up in our homes, and what can beat a bowl of lovely warm soup ready to warm up your belly as you snuggle up on the sofa!

So what do you prefer, tinned soup or homemade soup?

Tinned soup is obviously alot quicker to prepare, its just a matter of warming it up on the hob or in the microwave, but have you ever considered making your own soup?

Quick Vegetable Soup by Carol Love.

Ingredients

  • 1 frozen casserole mix containing vegetables such as carrots, swede, onions and leeks or use your own fresh vegetables.
  • 1 bay leaf.
  • Pinch of mixed herbs.
  • Pinch of salt and pepper.
  • 1 Oxo cube.
  • 2 tablespoons of vegetable granules(optional).

Put the vegetables into a large saucepan and cover with cold water. Add all the other ingredients apart from the vegetable granules.

Bring to the boil, stir and simmer. If desired you can add the vegetable granules to help thicken the soup.

Stire frequently and then serve.

This soup is perfect for heating up and taking in a flask to work!

Pumpkin & Onion Soup

Ingredients

  • 1lb / 450g pumpkin - cut into small cubes.
  • Stock cube of your choice.
  • 1 onion - I chose medium size.
  • 3 cups of water.
  • Salt and pepper.
  • Oil for frying onion (or use butter if you want).
  • Spaghetti - a minimum of about 15 sticks should do it.

First cut the onion up and fry until it softens, I found it best to fry whilst I attempted to cut up the pumpkin I bought (It took a while!). Once you've finally cut it up, add the pumpkuin, stock cube and the water into a saucepan with the onions and bring to the boil

Then cover and simmer for 15 minutes on a low heat.

This tastes fantastic and goes lovely with some crusty warm bread!

Now if you want you can blend the soup at this point, that is somthing that I do not like to do, the choice is yours.

Next add a pinch of salt and petter to taste.

Break up the spaghetti into small pieces and add to the soup.

Bring back to the boil, then cover and simmer for another 15 minutes or until the spaghetti is done.
